Analysis of the extraction of bioactive peptides obtained from collagen in marine species (fish and crustaceans): a literature review

Abstract

The valorization of marine by-products and the development of functional ingredients have driven growing interest in bioactive peptides derived from collagen due to their therapeutic properties and applications in the food industry. This study systematically analyzes the extraction methods, structural characterization, and functional evaluation of these compounds, highlighting their role in the circular bioeconomy. A total of 72 studies published between 2020 and 2025 were reviewed, focusing on antioxidant, antihypertensive, antimicrobial, and osteoprotective activities. Collagen, obtained from structures such as skin, scales, and exoskeletons of marine species, represents a valuable source for generating functional peptides. Among the most studied species are cod, tuna, flounder, shrimp, and crab. Emerging technologies such as ultrasound-assisted extraction, microwave-assisted extraction, and high hydrostatic pressure enable the production of low molecular weight peptides, enhancing their absorption and bioavailability. Various studies have demonstrated that these peptides exhibit high antioxidant capacity, contributing to the neutralization of free radicals, as well as antihypertensive activity through the inhibition of the angiotensin-converting enzyme. Additionally, they show antimicrobial effects against pathogens and potential benefits for bone health. Overall, these properties support their application as functional ingredients in food products, nutraceuticals, and pharmaceuticals.
